This wouldn't necessarily be the same as your greatest matches of all time, in fact the matches might not even be that good, just matches that you think any wrestling fan owes it to themselves to watch at least once.
Some of my picks:
Bret Hart vs Steve Austin - Wrestlemania XIII. By far and away the finest match I've ever seen. One of the few matches I'd truly consider a work of art.
Bret Hart vs Shawn Michaels - Survivor Series 97. Arguably the most famous match of all time, for the wrong reasons.
Mankind vs Undertaker - King of the Ring 98. Made Mick Foley a superstar. Biggest Holy-Shit moment ever.
Shawn Michaels vs Razor Ramon - Wrestlemania X. Wasn't the first ladder match, probably no longer the best, definitely not the most spectacular, but the one that put the concept on the map.
The Rock vs Hulk Hogan - Wrestlemania 18. Godawful match, but well worth watching for the incredible reactions from the crowd and the ultimate reminder of Hogan's ability to manipulate the crowd.
Travis Tomko vs Stevie Richards - Unforgiven 2004. Godawful match, but well worth watching for the incredible non-reactions from the crowd and the ultimate reminder that not everyone gets to be like Hogan. Watching this match makes you feel the same way you felt watching some of the excruciating moments of the UK version of The Office. Except that instead of laughing afterwards, you feel the need to take a series of cold showers.

Bret Hart Vs Mr. Perfect - Summerslam 1991. This captured my imagination when I first saw it aged 7. It's still may favourite ever match and I enjoy it every bit as much now as I did then although for slightly differet reasons.
'Macho Man' Randy Savage Vs Ric Flair - Wrestlemania 8. Fantastic match, following some excellent promos leading into it. It often gets overlooked when discussing this sort of thing but for me it's up their with some of the best WWF matches of the 90's.

Stone Cold v. The Rock, Wrestlemania XVII

Good pick there, still watch Taker-Foley HIAC match once every 2 months or so. Foley bumped like a madman and Taker was on form despite having a broken foot...superb match

Kevin Nash, Scott Hall & Mystery Partner v Sting, Lex Luger & Randy Savage - Bash at the Beach '96.
Considering it did so many things wrong, it's amazing that this match proved to be one of the most famous in the history of WCW and american pro wrestling. The heels spend the majority of the match outnumbered by the faces; Randy Savage should not have been in the match but rather a chief suspect in the 'Who's the Partner?' mystery with perhaps a run-in late on to save the WCW guys and they sacrificed their biggest merchandising face for the sake of an unexpected heel turn. Except it worked. Hogan turning heel and cutting that promo, for all that later went wrong with the nWo and WCW in genera was a tremendous moment.

Another in a long line of WWF/E not knowing when to pull the trigger. Angle was white hot with the crowd as a face and the two of them put on an absolutely classic match tainted only by the cheap finish . They switched the belt at Unforgiven in September but the moment had passed. A fabulous match that drew me in and I was gutted when Angle didn't get the belt that night.
Triple H v Scott Steiner - Royal Rumble 2003
My mate and I played a drinking game while watching this - we had to take a shot everytime Scott Steiner tried a suplex. We ended up bladdered. Absolutely hilarious watching him plod about for what feels like hours. I genuinely felt for Trips that night. The poor sod was out of his depth.

Most of the Angle/Benoit matches were great and if IIRC this was the first for the WWE Title between the two. Was a good match with close calls and submission reversals.
Cactus Jack vs. HHH - Royal Rumble 2000
The pure hatred made this a fantastic brawl to remember. Foley even taunting HHH to give him the chair shot while hancuffed was great.
Benoit vs. HBK vs. HHH - Wrestlemania XX
It was a special night as Benoit made his dream on the 20th WM. The crowd were into it all aswell as the ending scenes.
Eddie Guerrero vs. Brock Lesnar - No Way Out 04
Again like the Triple threat, it was special night for Guerrero although it didn't have the story behind it like Benoit. He did cheat but the crowd couldn't give a toss as it was his gimmick and Lesnar was heel anyway.

One match I forgot to add was one with my 2 all time fave wrestlers...Shawn Michaels vs Chris Jericho at WM19. Very underrated match. For their first feud it was a cracking match, great storytelling. Plus Y2J's dick-ishness after match kicking Michaels in the nuts was a great way to get a bit of heel heat back.
I loved their 2008 matches, but this match was a cool way to start the long term rivalry off

Kurt attacked HBK with the steel steps after he was eliminated, then brought back people from HBK's past including Sherri and Jannetty, with the feud building on both Raw and Smackdown.
